AKTIVITAS ENZIM FITASE PADA PERKEMBANGAN KACANG HIJAU (Phaseolus radiatus L)

Abstract


This is a study on the phytase enzyme activities on germination of Mung Beans (Phaseolus radiatus L). The activities and stability of phytase enzyme were observed under influence of various incubation temperature (27°C, 37°C and 55"C), and incubation time (1 hour, 2 hours and 3 hours) of the Mung Beans (Phaseolus radiatus L) in germinating for 1 to 5 days.

The results showed that activities of phytase enzyme at the same temperature and incubation time are the same in Mung Beans seed germinating for 1 to 5 days. Phytase enzyme is one of the termostabile enzymes with optimal activities at high temperature.
